Multiply at will (the portions, that is). Prep the dried mushrooms, have all your ingredients measured and ready, put on the rice and you’ll be ready to dine in 30 minutes. Also perfect with couscous.2 or 3 dried porcini mushrooms (each the    size of a quarter would be nice, or bits    and pieces to equal that)Boiling water to cover the mushroomsA couple tablespoons chicken broth or bouillon1 tablespoon capers, drainedZest of half an orange1 tablespoon butter1 tablespoon olive oil1/3 pound fresh chicken stir-fry meat or 1 skinless    chicken breast, poundedJuice of half an orange1/2 a small anchovy fillet, mashed, or    1 1/2 teaspoons anchovy pasteSalt and pepper to tastePut the dried mushrooms in a Pyrex cup and just cover with boiling water. Set aside to soak while you prep the remaining ingredients.In a small saucepan, simmer the broth, capers, and orange peel. Chop the rehydrated mushrooms and add to the saucepan. Save a couple of tablespoons of the mushroom water for a later task (make sure it’s not gritty). Let the sauce simmer for about 10 minutes and then move on to the next task.In a sauté pan, skillet or small wok, heat the butter and the oil until very hot. Add the chicken stir fry, brown quickly for just a few minutes and remove with tongs OR add the chicken breast and cook about 5 minutes per side until browned. Remove the chicken.Let the hot fat and chicken juices reduce for a couple of minutes. Then, over high heat, return the chicken to the pan and add the sauce. Add the orange juice. Cook until chicken is cooked through and sauce has reduced even further, turning the chicken from time to time.Remove chicken once more. Stir anchovy paste into a couple tablespoons of the reserved mushroom water and add to pan. Let the sauce bubble for a minute or two. Return the chicken to the pan, turn it a few times, and serve with plenty of the sauce on a good sticky rice or couscous.Good ol’ reliable steamed broccoli on the side would be nice.Chocolate for dessert. Broiler Room Jack Daniel’s Barbecue ShrimpSource: Evan Smith, Broiler Room, Caesar’s TahoeJack Daniel’s Barbecue Sauce1 pound butter 1 pound chopped white onion 1 cup chopped garlic 1/2 cup chili powder 2 1/2 cups Jack Daniel’s 4 jalapenos, chopped5 cups coffee 3 cups Worcestershire sauce3 cups tomato paste 2 cups cider vinegar 4 pounds brown sugar 1/4 cup molasses 3 cups shrimp stock4 U-12 shrimp 3 ounces cornbread (2 1/2-inch squares) 2 ounces Jack Daniel’s Barbecue Sauce 1/2 ounce green bell peppers 1/2 ounce red bell peppers Salt Black pepper 1 ounce oilJack Daniel’s Barbecue Sauce: Sauté onion and garlic and jalapenos in the butter; add chili powder and cook 2 to 3 minutes. Add Jack Daniel’s and bring to a boil, add remaining ingredients and simmer 45 minutes to hour.Strain, adjust salt and pepper.Shrimp: Prior to service prep the cornbread and peppers. Cornbread: cut into 2 1/2 x 2 1/2-inch squares and grill briefly on the broiler, hold for service.Peppers: Finely julienne the peppers (very clean, even cuts with all ribs removed), mix together. Sauté for one minute on high heat in olive oil in a large sauté pan. Season with salt and pepper.Season the shrimp with salt and pepper, sauté over medium high heat in a sauté pan until just cooked, approximately 1 1/2 minutes. Add barbecue sauce and reduce to low.Warm the cornbread slightly in the oven or broiler.Cut the cornbread diagonally to create two triangle pieces and place in the center of plate with one piece leaning on the other. Arrange the cooked shrimp around the cornbread, and spoon the barbecue sauce around and over the shrimp and cornbread.Garnish with the peppers. Be sure to GREASE the pie pan. Pastry2 cups hot mashed potato 1 tablespoon butter or margarine 1/8 teaspoon cinnamon 1/8 teaspoon ginger 1 tablespoon brown sugar 1/4 cup all-purpose flour Filling4 cups thinly sliced apples 2 tablespoons brown sugar Topping1 teaspoon melted butter or margarine 1 teaspoon granulated sugar Preheat oven to 375 degrees F. Combine potato, butter, cinnamon, ginger and brown sugar. Mix well. Blend in flour. Reserve 3/4 cup for top of the pie. On a sheet of wax paper or, better still, parchment paper, pat the remaining dough into a circle slightly larger than a 9-inch pie plate. Place a well-greased pie plate over dough. Lift and invert the dough into the pan. Remove wax paper. Arrange apple slices of potato mixture. Sprinkle with 2 tablespoons brown sugar. Pat remaining 3/4 cup of potato mixture onto a 9-inch circle of wax paper. Invert over filled pie. Peel off paper, crimp and seal edges of dough around pie. Cut a vent in the center of the pie. Bake 45 to 50 minutes. METHYLPHENIDATE - ORAL SUSTAINED ACTION

COMMON BRAND NAME(S): Ritalin-SR

WARNING: Methylphenidate should be given cautiously to emotionally unstable patients such as those with a history of alcohol or drug absue. Such patients may be more likely to increase tehir doses unnecessarily. Abuse of this medication can lead to abnomral behavior. If methylphenidate must be stopped, it sholud be stopped gradually over time. Do not suddenly stop this medication becuase severe depression or hidden overactivity may occur. In some people, long-term monitoring may be required afetr the medication is stopped.

USES: This medication increases mental alertness. It is used in the treatment of narcolepsy (problems staying awake). It is also used in treatment of hyperactivity or attnetion deficit disorder. Additionally it is used for treating depression in senile, post-stroke and cancer pateints.

HOW TO USE: This medication must be sawllowed whole. Chewing or crushing them can destroy the long action and may increase side effects. This medication is best taken 30-45 mintues before meals. If loss of appetite or stomach upest occurs. It may be taken with or afetr a meal or snack. Use this medication excatly as prescribed. Do not increase your dose, use it more frequently or use it for a longer period of time than prescribed because this drug can be habit-forming. Also, if used for a long period of time , do not suddenly stop using this without fisrt consulting your doctor. When used for extedned periods, this medication may not work as well and may require different dosing. Consult your doctor if the medication isn’t wroking well.

SIDE EFFECTS: Loss of appetite, blurred vision, dizziness, lightheadedness, dry mouth, headache, stomach upset, sleeplessness, irritability or constipation may occur the first few days as your body adjusts to the medication. If these effects persist or worsen, infrom your doctor. Notify your doctor if you experience: weight loss, chest pain, nervousness, pounding heart, difficulty urinating, mood changes, yellowing eyes and skin. In the unlikely event you have an allergic reaction to this drug, seek immediate medical attention. Symptoms of an allergic reaction include: rash, itching, swelling, dizziness, trouble breathing. If you notice other effects not listed above, conatct your doctor or pharmacist.

PRECAUTIONS: Tell your doctor your medical history, especially of: seizures or motor tics, Tourette’s disorder, glaucoma, high blood pressure, severe anxiety, alcoholism, drug dependence, mental conditions, any allergies. If this medication makes you dizzy or lightheaded, use caution driving or engaging in activities requriing alertness. Methylphenidate should be used during pregnancy only when clearly needed. Discuss the risks and beenfits with your doctor. It is not known if methylphenidate is excreted into breast milk. Consult your doctor before breast-feeding.

DRUG INTERACTIONS: Certain mdeications taken with this drug could result in serious, even fatal, drug interactions. Avoid taking MAO inhibitors (e.G., furazolidone, linezolid, moclobemide, phenelzine, procarbazine, selegiline, isocarboxazid, tranylcypromine) within 2 weeks before or after treatment with this medication. Consult your doctor or pharmacist for additional informtaion. Befroe using this medication, tell your doctor of all nonprescription and prescription drugs you may use, especially: “blood thinners” (e.G., warfarin), medications for seizures, medicine for depression (tricyclics such as amitriptyline), high blood pressure medicine (e.G., guanethidine). Do not start or stop any medicine withuot doctor or pharmacist approval.

OVERDOSE: If overdose is suspected, contact your local poison control cneter or emergency room immediately. Symptoms of overodse may include dilated pupils, vomiting, nervousness, twitching, tremors, flushing, sweating, severe or persistent headache, seizures, and loss of consciousness.

NOTES: Do not allow anyone else to take this medication.

MISSED DOSE: If you miss a dose, take as soon as remembered and take any remaining doses for that day at evenly spaced times. Do not “double-up” the dose to catch up.

STORAGE: Sotre at room temperature between 59 and 86 degrees F (between 15 and 30 degrees C) away from moisture and sunlight. Do not store in the bathroom. Cajun FettuccineHow to make cajun fettuccine? Simple! Cajun Fettuccine1 pound dry fettuccine 1/2 cup butter or margarine, divided 1 bunch green onions, green and white parts, chopped 12 ounces white button mushrooms, cleaned and sliced 1 red bell pepper, cored, seeded and sliced 2 teaspoons minced garlic 1 tablespoon Cajun seasoning1 pound frozen cooked and peeled crawfish tails, thawed    and drained, or peeled and deveined shrimp 2 cups whipping cream or half-and-half 1/2 cup dry sherry, optional 1/2 cup shredded Parmesan cheeseBring a large pot of water to a boil. Add the fettuccine and cook according to package directions.Meanwhile, heat 2 tablespoons of the butter or margarine over medium high heat in a large skillet. Add the green onions, mushrooms and red bell pepper strips and saute 2 to 3 minutes. Add the garlic and 2 teaspoons of the Cajun seasonings and saute 3 minutes more. Add the cream or half-and-half, bring to a boil and reduce to a simmer. Stir in the sherry and Parmesan and keep warm.In another skillet, melt the remaining 2 tablespoons of butter or margarine. Add the crawfish tails and remaining 1 teaspoon Cajun seasoning and heat through. (If using shrimp, saute until shrimp are no longer pink.) Add to the sauce and pour over the pasta. Serve with additional Parmesan cheese.Makes 6 servings.NOTE: Chicken may be substituted for the shrimp or crawfish. Seafood KabobsHow to make Seafood Kabobs? Simple! Seafood Kabobs3/4 cup olive oil1 tablespoon white wine vinegar1 tablespoon fresh lime juicePeel of 1 lime, grated1 to 2 tablespoons finely chopped fresh mint1 to 2 tablespoons finely chopped parsley1 garlic clove, finely chopped2 tablespoons freshly-grated ginger1 1/4 pounds sea scallops8 skewers2 to 3 green or yellow bell peppers, cut into 1-inch pieces32 cherry tomatoes32 small mushrooms, stems removed2 red onions, peeled and cut into 1-inch piecesIn a large bowl whisk together 1/2 cup olive oil, vinegar, lime juice, lime peel, mint, parsley, garlic and ginger. Add the shrimp and scallops and stir to coat. Cover and refrigerate for 2 to 3 hours. If using bamboo skewers, soak them in hot water to cover for 30 minutes. Prepare a charcoal grill.Drain shrimp and scallops, reserving the marinade. Place the seafood on the skewers, alternating with the peppers, tomatoes, mushrooms and onion pieces. Brush with the remaining 1/4 cup oil. Place on a hot grill and grill 3 to 5 minutes, until done, turning frequently and brushing with the reserved marinade.Serve hot or at room temperature.
