Serve warm or cooled with a dusting of powdered sugar. Use golden or red delicious apples.1 cup all-purpose flour1/2 teaspoon salt1 teaspoon baking soda2 cups cored, peeled and diced sweet apple1/4 cup salad oil1 egg1 cup granulated sugar1 teaspoon cinnamon1 teaspoon nutmeg1/2 cup chopped nutsPowdered sugarSift flour, salt and soda together; set aside.Place apple in a medium-size bowl. Break egg over apples. Add oil, sugar, cinnamon, nutmeg and nuts; blend thoroughly. Stir dry mixture into apple mixture just until flour is moist. (The mixture will seem dry.) Spread in a greased 8-inch square pan. Bake in a 350 degree F oven for 30-35 minutes until a wooden pick comes out clean. Turn out on plate and sprinkle with powdered sugar. Gajar Ki Kheer (Carrot Pudding)4 cups milk2 tablespoons long-grain rice2 cups firmly packed peeled and grated carrots1/2 cup granulated sugar2 tablespoons slivered blanched almonds1/2 teaspoon ground cardamom1 teaspoon rose water (optional)1/4 cup heavy cream1/4 cup chopped pistachiosCombine the milk and rice in a large, heavy saucepan and bring to a boil over moderate heat, stirring frequently. Reduce the heat and cook uncovered at a slow boil for 20 minutes, stirring frequently.Add the carrots and continue cooking uncovered for 15 minutes, stirring frequently.Add the sugar and almonds and cook an additional 10 minutes, stirring frequently, until the mixture begins to stick to the bottom of the pan.Remove from the heat and allow to cool to room temperature. Stir in the cardamom, optional rose water, and cream. Chill thoroughly. When chilled, the pudding should have a consistency slightly thinner than rice pudding, but it should not be runny. Cajun FettuccineHow to make cajun fettuccine? Simple! Cajun Fettuccine1 pound dry fettuccine 1/2 cup butter or margarine, divided 1 bunch green onions, green and white parts, chopped 12 ounces white button mushrooms, cleaned and sliced 1 red bell pepper, cored, seeded and sliced 2 teaspoons minced garlic 1 tablespoon Cajun seasoning1 pound frozen cooked and peeled crawfish tails, thawed and drained, or peeled and deveined shrimp 2 cups whipping cream or half-and-half 1/2 cup dry sherry, optional 1/2 cup shredded Parmesan cheeseBring a large pot of water to a boil. Add the fettuccine and cook according to package directions.Meanwhile, heat 2 tablespoons of the butter or margarine over medium high heat in a large skillet. Add the green onions, mushrooms and red bell pepper strips and saute 2 to 3 minutes. Add the garlic and 2 teaspoons of the Cajun seasonings and saute 3 minutes more. Add the cream or half-and-half, bring to a boil and reduce to a simmer. Stir in the sherry and Parmesan and keep warm.In another skillet, melt the remaining 2 tablespoons of butter or margarine. Add the crawfish tails and remaining 1 teaspoon Cajun seasoning and heat through. (If using shrimp, saute until shrimp are no longer pink.) Add to the sauce and pour over the pasta. Serve with additional Parmesan cheese.Makes 6 servings.NOTE: Chicken may be substituted for the shrimp or crawfish. Seafood KabobsHow to make Seafood Kabobs? Simple! Seafood Kabobs3/4 cup olive oil1 tablespoon white wine vinegar1 tablespoon fresh lime juicePeel of 1 lime, grated1 to 2 tablespoons finely chopped fresh mint1 to 2 tablespoons finely chopped parsley1 garlic clove, finely chopped2 tablespoons freshly-grated ginger1 1/4 pounds sea scallops8 skewers2 to 3 green or yellow bell peppers, cut into 1-inch pieces32 cherry tomatoes32 small mushrooms, stems removed2 red onions, peeled and cut into 1-inch piecesIn a large bowl whisk together 1/2 cup olive oil, vinegar, lime juice, lime peel, mint, parsley, garlic and ginger. Add the shrimp and scallops and stir to coat. Cover and refrigerate for 2 to 3 hours. If using bamboo skewers, soak them in hot water to cover for 30 minutes. Prepare a charcoal grill.Drain shrimp and scallops, reserving the marinade. Place the seafood on the skewers, alternating with the peppers, tomatoes, mushrooms and onion pieces. Brush with the remaining 1/4 cup oil. Place on a hot grill and grill 3 to 5 minutes, until done, turning frequently and brushing with the reserved marinade.Serve hot or at room temperature.
