Swedish Tea Cakes1 package dry yeast1/4 cup warm water2 1/4 cups sifted flour2 tablespoons granulated sugar1 teaspoon salt1/2 cup butter, softened1/4 cup evaporated milk1 egg1/4 cup chopped raisinsSoften yeast in warm water. Sift flour, sugar and salt into mixing bowl. Cut in butter until particles are fine. Add evaporate milk, egg, raisins and yeast to flour and butter mixture. Mix well. Cover. Chill at least 2 hours or overnight. Make filling when ready to roll out dough.Divide dough into three parts. Roll out one part on a floured surface to a 12 x 6-inch rectangle. Spread with 1/3 of the filling. Roll up starting with 12-inch side. Seal by pinching dough together. Make roll into crescent shape and place on cookie sheet lined with aluminum foil. Make cuts along outside edge about 1 inch apart to within 1/2 inch of center. Repeat. Let all three rolls rise in a warm place (85 degrees F to 90 degrees F) until light (about 45 minutes). Bake at 350 degrees F for 20 to 25 minutes. Frost with icing while hot. Freezes well. Multiply at will (the portions, that is). Prep the dried mushrooms, have all your ingredients measured and ready, put on the rice and you’ll be ready to dine in 30 minutes. Also perfect with couscous.2 or 3 dried porcini mushrooms (each the size of a quarter would be nice, or bits and pieces to equal that)Boiling water to cover the mushroomsA couple tablespoons chicken broth or bouillon1 tablespoon capers, drainedZest of half an orange1 tablespoon butter1 tablespoon olive oil1/3 pound fresh chicken stir-fry meat or 1 skinless chicken breast, poundedJuice of half an orange1/2 a small anchovy fillet, mashed, or 1 1/2 teaspoons anchovy pasteSalt and pepper to tastePut the dried mushrooms in a Pyrex cup and just cover with boiling water. Set aside to soak while you prep the remaining ingredients.In a small saucepan, simmer the broth, capers, and orange peel. Chop the rehydrated mushrooms and add to the saucepan. Save a couple of tablespoons of the mushroom water for a later task (make sure it’s not gritty). Let the sauce simmer for about 10 minutes and then move on to the next task.In a sauté pan, skillet or small wok, heat the butter and the oil until very hot. Add the chicken stir fry, brown quickly for just a few minutes and remove with tongs OR add the chicken breast and cook about 5 minutes per side until browned. Remove the chicken.Let the hot fat and chicken juices reduce for a couple of minutes. Then, over high heat, return the chicken to the pan and add the sauce. Add the orange juice. Cook until chicken is cooked through and sauce has reduced even further, turning the chicken from time to time.Remove chicken once more. Stir anchovy paste into a couple tablespoons of the reserved mushroom water and add to pan. Let the sauce bubble for a minute or two. Return the chicken to the pan, turn it a few times, and serve with plenty of the sauce on a good sticky rice or couscous.Good ol’ reliable steamed broccoli on the side would be nice.Chocolate for dessert. Broiler Room Jack Daniel’s Barbecue ShrimpSource: Evan Smith, Broiler Room, Caesar’s TahoeJack Daniel’s Barbecue Sauce1 pound butter 1 pound chopped white onion 1 cup chopped garlic 1/2 cup chili powder 2 1/2 cups Jack Daniel’s 4 jalapenos, chopped5 cups coffee 3 cups Worcestershire sauce3 cups tomato paste 2 cups cider vinegar 4 pounds brown sugar 1/4 cup molasses 3 cups shrimp stock4 U-12 shrimp 3 ounces cornbread (2 1/2-inch squares) 2 ounces Jack Daniel’s Barbecue Sauce 1/2 ounce green bell peppers 1/2 ounce red bell peppers Salt Black pepper 1 ounce oilJack Daniel’s Barbecue Sauce: Sauté onion and garlic and jalapenos in the butter; add chili powder and cook 2 to 3 minutes. Add Jack Daniel’s and bring to a boil, add remaining ingredients and simmer 45 minutes to hour.Strain, adjust salt and pepper.Shrimp: Prior to service prep the cornbread and peppers. Cornbread: cut into 2 1/2 x 2 1/2-inch squares and grill briefly on the broiler, hold for service.Peppers: Finely julienne the peppers (very clean, even cuts with all ribs removed), mix together. Sauté for one minute on high heat in olive oil in a large sauté pan. Season with salt and pepper.Season the shrimp with salt and pepper, sauté over medium high heat in a sauté pan until just cooked, approximately 1 1/2 minutes. Add barbecue sauce and reduce to low.Warm the cornbread slightly in the oven or broiler.Cut the cornbread diagonally to create two triangle pieces and place in the center of plate with one piece leaning on the other. Arrange the cooked shrimp around the cornbread, and spoon the barbecue sauce around and over the shrimp and cornbread.Garnish with the peppers.
