Creamy Shrimp Pasta2 cups Campbell’s Cream of Mushroom Soup1/2 cup milk1/2 cup water1 pound thin spaghetti1 tablespoon olive oil1 1/2 pounds fresh peeled shrimp2 or 3 ounces cream sherrySauce: In a medium saucepot, mix together mushroom soup, milk and water. Heat to a simmer, stirring constantly until boiling.Add pasta to 4 to 6 quarts of water, bringing to a rapid boil. Add 1 tablespoon oil to keep pasta separated.Boil, uncovered, 8 to 10 minutes.After 7 minutes of boiling the pasta, add the shrimp and cream sherry to the sauce. Steam in the sauce for 3 to 5 minutes.Spoon sauce over each serving of the pasta, and garnish with fresh parsley sprigs.Yields 4 to 6 servings. Barszcz (Polish Easter Soup)6 cups water1 pound Polish kielbasa sausage2 cups sour creamSalt and freshly ground pepper, to taste1 tablespoon plain or beet horseradish2 tablespoons lemon juice or vinegar, or to taste1 cup sliced mushrooms6 hard boiled eggs, peeled and sliced1 cup cubed, cooked ham1 cup cooked diced potatoes1 cup cooked diced beets (optional)Chopped fresh dill or parsley (for garnish)In a large kettle, bring water to a boil and add the kielbasa to cook for 1 hour.Remove kielbasa from water and cut into thin slices. Add the horseradish, mushrooms, salt and pepper to the broth and simmer covered for about 15 minutes. Allow to cool.In a separate bowl, beat sour cream with about 3 cups of the cool broth. Pour this mixture back into the kettle with the rest of the broth. Add lemon juice or vinegar. Reheat before serving, but do NOT bring to a boil. Fill individual serving bowls with the liquid allowing each person at the table to add the thinly sliced kielbasa pieces, hard boiled eggs, ham, potatoes or beets to their taste. Baked LasagnaSauce3 pounds ripe tomatoes, chopped2 carrots, peeled and chopped2 garlic cloves, crushed1 tablespoon chopped parsley3 tablespoons tomato purée1 large onion, peeled and chopped3 stalks celery, choppedPut all the ingredients into a large cooking pot. Cover and simmer for about 1 hour. Pass through a sieve; return to the pot, and season to your satisfaction. Continue to simmer until sauce has thickened. Just before using this sauce, stir in 2 tablespoons of olive oil and 2 tablespoons of butter.Lasagna3/4 to 1 pound lasagna noodlesButter 1/2 pound mozzarella cheese1/4 pound Italian sausage or ground beef, coarsely chopped2 hardboiled eggs, chopped1 cup grated Parmesan cheese1 cup ricotta or cottage cheeseBrown sausage or beef, then drain. Boil lasagna noodles. Drain and put a layer in a well-buttered casserole dish. Add a layer of mozzarella cheese, then a layer of sausage or beef and a thin layer of hardboiled egg. Sprinkle with grated Parmesan and ricotta or cottage cheese. Moisten cheese with some of tomato sauce. Continue in layers, finishing with a good thick layer of grated Parmesan. Dot with butter and bake at 350 degrees F for about 30 minutes.Serve with warm roll of garlic bread.
